Gluten Free Pumpkin Spice Cookies




Oh Pumpkin recipes.... it's about time I make some of you. This year, all tasty treats will be gluten free. I eat VERY minimal gluten if any at all, and would like to keep it that way through the holidays! 

So here goes nothing.... Gluten Free/Dairy Free Pumpkin Spice Cookies 




Ingredients: 
  • 2 cups gluten free flour ( almond or coconut flower would work as well). 
  • 1/2 cup pumpkin puree
  • 1/2 cup coconut oil 
  • 3/4 cup pure honey (not the fake junk) 
  • 1 egg
  • 1 tsp cinnamon 
  • 1/2 tsp nutmeg 
  • 1/2 tsp vanilla extract 
  • 1/2 tsp ground ginger 
  • 2 tsp baking powder
  • 1/2 tsp salt 
Cookie Coating: 
1/2 cup of sugar (I use organic cane sugar). 

Preheat oven to 350. In a medium bowl, mix pumpkin puree, honey, 1 egg, and melted coconut oil. In a separate bowl mix all dry ingredieants. Slowly blend wet and dry ingredients until a cookie dough consistency is reached. Shape dough into 1 inch balls, then roll in granulated sugar. Drop the cookies on a greased cookie sheet 1 inch apart and place in the over for 15 minutes.

    Have you tried Pamela's baking mix? It is yummy for pancakes. Bisquick makes a gf baking mix now too.
