So I came across this recipe in my box of recipes I received at my bridal shower. I decided that Wednesday would be my cookie baking day and to go ahead and try it out. I was thoroughly confused at the fact cookies could be made without flower (excuse my ignorance). I tweaked this recipe just a bit, and the outcome was delicious. The texture was unique, but this would be a great recipe to share with friends or family on a gluten free diet! Yumm!
Ingredients:
- 1 cup peanut butter (I used chunky)
- 1 cup sugar
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
Directions:
Preheat oven to 350 degrees.
In a medium bowl, lightly beat your large egg. Continue by mixing in your cup of peanut butter, cup of sugar and vanilla extract, until well combined.
On a ungreased cookie sheet, spoon one tablespoon of mixture, 2 inches apart. Flatten the mounds of cookie dough with a fork, making a crosshatch pattern.
Place in oven for 10 minutes, switching the position of the cookie sheet about halfway through bake time.
Remove from oven and transfer to cooling racks.
Thats it! You're all done! How easy was that?
